Uku

One of the three most popular deepwater snappers in Hawaii, Uku is rich in natural fat, a desirable attribute for sashimi. Moist and firm-textured, Uku simulates an almost lobster-like density and heartiness. Slightly stronger flavored than the very delicate Opakapaka, Uku is an impressive host to rich sauces. Preparation methods include baking, broiling, sautéing and steaming.
