Opah is one of the most fantastic, diverse and interesting species in the world. Hawaiian Opah is unique for its bright red and orange meat color. Opah is one of the highest fat content fish, even more than salmon. The meat has four different grain textures that range from smooth and Ahi-like to heavy laced fat. Opah has a natural sweet flavor and maintains a firm nature through cooking.

- Opah fillets are always fresh, never frozen. Each fillet is vacuum-sealed with dry lock fresh guard. Minimum order for Opah is a 5lb. unit. Fillets are skin-on, bone-out and cut into portionable sections. Fillet sections range from 5lbs. to 25lbs.
