Monchong

One of the most versatile fish from Hawaii, Monchong can only be found in Hawaii. Available year round, Monchong is a great menu item that can be used in a variety of applications. Snow-white meat that is firm enough for the grill yet is tender with a high oil content which preserves moisture and offers a unique deep buttery flavor. Semi-firm meat, cooks to a tender, white, flaky finish. Great for grilling, saute, bake or fantastic for poaching.

- Fish fillets are always fresh, never frozen. Each fillet is vacuum-sealed with dry lock fresh guard. Minimum order for this species is a 1.5lb. unit. Fillets are skin-on, bone-out and cut into portionable sections. Fillet sections range from 1.5lbs. to 4lbs.
