The 1 Ahi sashimi differs from the 1+ and 1++ grades by having slightly more water content and a small decrease in red color. The color is cherry red with a semi-translucent quality. This grade of Ahi sashimi offers a great value for applications that call for raw or light cooking or flash searing.
