Our 1++ grade is the absolute best grade of ahi in the world. 1++ is commonly traded on the best Tokyo markets commanding premium prices. The meat is dry and sticky and the color is deep red with great translucent properties. The shelf life on this ahi is unusually long allowing color to maintain strength for up to ten days. When sliced thin for various applications, this Island beauty will burst into an electric red color.
